Japanese Chef Takuma Ishikawa created KOKORO mazesoba in Tokyo Japan in 2013. Soon Mazesoba becomes extremely popular in Japan and scattered in major Japanese cities, especially in Tokyo where KOKORO brand founder Takuma Ishikawa started his business and won the Best 2014 Mazesoba Award in Japan. Over the years, many tried to imitate the taste but nothing tastes as good as the origin of mazesoba by Chef Takuma. KOKORO not only focuses on the cooking delicious dishes, but also on the guidance on how to provide wholehearted service to the customers. The series of instructions start from the pre-opening training session, and after the opening, the head office will continuously give supports by the supervisors.
1.We make all soba noodles in house daily
2.We use more than 35% whole wheat.
3.We use water softening machine from Japan to soften the water.
4.Right water + right balanced flour + 7 mins boiling = Perfect soba noodle
